Fish tacos and avocado-red onion salad

My kids love taco night. Sometimes it’s beef, sometimes chicken, but our favorite of all is fish. It’s so much fun to assemble your own taco with your choice of toppings. It makes for a fun family dinner: simple and quick but very gratifying.
I make my own spice mix: it takes just a few minutes and it tastes infinitely better than a store bought mix.
I love the tartness that the lime brings out of the fish (first in the oven and then fresh in the final assembly).
To go with the fish tacos I improvised a simple but cute salad with an extra avocado I had on hand (see below). The colors were so bright and vibrant (especially on the blue plate!).
2 thick fish filets (I typically use Tilapia)
Home-made taco seasoning*
Olive oil (or olive oil spray)
1 lime sliced
Place tilapia filets on a piece of aluminum foil place on a cookie sheet. Drizzle with olive oil. Sprinkle taco seasoning on the filet and pat onto fish – both sides. Slice lime, and place lime slices over the filet. Cover with foil, as if to make a package. Place in a preheated 350 degree oven for about 20 minutes.
After tilapia is cooked through, open up foil packet, discard lime, and enjoy the fish with you favorite taco ingredients.
Avocado (or guacamole)
Diced tomatoes (or salsa)
Tartar sauce (or sour cream) – low fat or regular
Caramelized onions and bell pepper strips**
Shredded lettuce (optional)
Grated lime zest (this TRULY is the secret kick to this recipe) OR chopped cilantro
*Home-made taco seasoning:
1 Tbsp of minced dried onions
2 tsp chili powder
1 1/2 tsp salt
1 tsp garlic powder
1 tsp cornstarch
1 tsp ground cumin
1/2 to 1 teaspoon cayenne pepper or paprika
Stir to blend. (Makes the equivalent of a 1 1/4-ounce package of taco seasoning mix.)
** Caramelized onions and bell pepper strips
In a non stick pan add some vegetable oil. Add onions cut into thin slices and bell peppers cut into thin strips. Saute until golden. Add 1 Tbsp sugar and 1 Tbsp balsamic vinegar. Let the flavors mingle. Season with salt.
Avocado red onion salad
1 lime, juice
1/2 red onion, sliced thin
1 Tbsp vinegar
2 tsp sugar
1 pinch chipotle pepper powder (or smoked paprika)
Scoop small balls out of the avocado with a mellon-baller, toss with the lime juice and set aside.
In a small micro-wave proof bowl mix together the onion, vinegar and sugar. Micro-wave on high a couple of minutes until onions are soft. This will bring out the sweetness. Allow to cool.
Sprinkle avocado balls with chipotle pepper powder and salt then top with onions.
