Spring, Easter and Lamb are a traditional combination. Easter means re-birth, renewal, resurrection. Summer is here… it was 94 degrees today here…wow!!!I had a few girlfriends over at my home recently to celebrate my birthday. I mounted my disco ball, bought a few hoola hoops, made a few cucumber mini-sandwiches and assembled a pink lemonade cocktail. For Easter lunch I made “Colomba pasquale” which literraly means Easter Dove in Italian.It is a traditional Italian Easter sweet and soft risen bread which contains orange peel (zested or candied) and is topped with a sugar crust and often almonds.
