Earl-grey tea shortbread cookies

The end of the school year is approaching and we are rounding up conversations with the teachers summarizing the year. I am so grateful for the dedication, energy and passion the teachers put into my kids’ life. They are imparting them the love for learning and helping them explore the world with their own capabilities. I feel lucky to have them, especially in light of the declining state of education these days. Children require all of our attention: they are the ones that will form and shape our future so we have to be thankful to anyone that loves them and nourishes them.
As I met with the teachers for the last time, I brought them some home made Earl-grey tea shortbread cookies: they are buttery and fragrant, wonderful when dipped in fresh brewed tea.
If using whole leaf tea, you can grind the tea leaves with a mortar and pestle.

Earl-grey tea shortbread cookies
Recipe from Martha Stewart (packaging idea from me!)
Makes about 8 dozen
2 cups all-purpose flour, plus more for dusting
2 tablespoons finely ground Earl Grey tea leaves, (from about 8 tea bags)
1/2 teaspoon salt
2 (8 ounce) sticks unsalted butter, softened
1/2 cup confectioner’s sugar
1 tablespoon finely grated orange zest
Whisk together flour, tea, and salt in a small bowl; set aside.
Put butter, sugar, and zest in the bowl of an electric mixer. Mix on medium speed until pale and fluffy, about 3 minutes. Reduce speed to low; slowly mix in flour mixture until just combined.
Divide dough in half. Transfer each half to a piece of parchment paper; shape into logs. Roll in parchment to 1 1/4 inches in diameter, pressing a ruler along edge of parchment at each turn to narrow log and force out air. Transfer in parchment to paper-towel tubes; freeze 1 hour.
Preheat oven to 350 degrees. Cut logs into 1/4-inch-thick slices.
Space 1 inch apart on parchment-lined baking sheets.
Bake until edges turn golden, 13 to 15 minutes.
I like to provide a hand-written recipe card when I am gifting home-made food.
Of course, as to be expected, these cookies are delightful dipped in Earl Grey tea!
To play a whimsical game on the ingredients, wrap them as if they were a tea bag, using the dipping line from the tea bags.

Mmmm…these look delicious. I'm not a fan of drinking earl grey…do you think these would taste good to me still?
Amber: yes!!! absolutely. PLUS you can substitute whatever tea you prefer over earl grey. It's a fun idea and you could go with Orange Pekoe or Jasmine or Darjeeling or anything else. And of course add a citrus peel of your liking. Maybe lemon zest instead of orange? Have fun!
